Ingredients for your cheesecake

Base

  • 350 g of dry biscuits, the taste you prefer
  • 100 g of butter

Cream and filling

  • 500 g of mascarpone cheese
  • 250 g of fresh cream
  • 120 g of icing sugar
  • 12 g of gelatin

If you are looking for a plant-base alternative to gelatine, there are many other ingredients that will help you giving the right consistency to your cream, such as agar agar, corn starch or potato starch. These substitutes are perfect to create a plant-base version while maintaining the creamy texture.

Topping

  • 300 g of strawberry jam (or the jam you prefer)

How to prepare your cheesecake

To prepare the base

  • Blend the biscuits with a mixer until they are reduced to a fine powder.
  • Melt the butter in a saucepan and once cooled, mix it with the biscuits
  • Line with baking paper a round, openable mould of approximately 22 cm.
  • Pour the mixture into the mould. Level it with the help of a teaspoon.
  • Leave the base to cool in the refrigerator for at least 30 minutes.

To prepare the cream and the filling

  • Keep apart 2 tablespoons of liquid cream, whip the rest of the cream with whisks adding in the bowl 100 g of icing sugar.
  • In a separate bowl, mix the mascarpone with the leftover sugar.
  • Soften the gelatin in cold water for 10 minutes, dissolve it in the remaining hot cream previously kept aside.
  • Add mascarpone to whipped cream, adding the melted gelatin.
  • Pour the mixture on the biscuit base and level
  • Let cool down in the refrigerator for at least 2 hours.

The cheesecake lends itself to infinite variations thanks to the personal choice of jam for the final covering.

  • 200 g of butter biscuits
  • 100 g of melted butter
  • 500 g of creamy cheese
  • 250 ml of fresh whipped cream
  • 100 g of sugar
  • 1 teaspoon of vanilla extract
  • 150 g of jam
  • Fresh strawberries to decorate

How to prepare your no-bake cheesecake

  • Prepare the base as in the previous recipe, using biscuits and butter.
  • For the filling, mix the cream cheese with sugar and vanilla.
  • Gently add the whipped cream into the cheese mixture.
  • Pour the filling onto the base and level
  • Refrigerate your dessert for at least 4 hours or overnight.
  • Before serving, spread the jam you prefer on the surface and decorate with strawberries or other fresh seasonal fruit.

This gelatin-free version is quicker to prepare and offers a slightly softer and velvetier texture than traditional cheesecake, while keeping its irresistible flavor.
