  • 250 g of almonds
  • 100 g of butter
  • 100 g of icing sugar
  • 200 g of cherry jam
  • 2 eggs

Preparation

  • In a large bowl pour the flour, sugar, baking powder, a pinch of salt, lemon peel and cold butter, mix everything until you obtain a compact and sandy dough.
  • Add 1 egg and knead again until you’ll obtain a homogeneous Let the mixture rest in the refrigerator for about 30 minutes.
  • After 30 minutes, butter and flour a baking tray, take the mixture and spread it well inside.
  • Prick the bottom of the pastry with a fork and pour in the cherry jam, leave aside and let’s start with the cream.
  • Blend the almonds in the blender to obtain a floury consistency.
  • Pour the icing sugar and softened butter into a bowl and start mixing everything with a fork.
  • Add the blended almonds, add the second egg, mix again and once the ingredients are blended, pour the cream over the jam and align the surface.
  • Bake the tart in the static oven preheated to 170° for 45 minutes. When the cream is golden brown the cake will be ready to be tasted!
