Easter Monday Picnic
For many people Easter Monday is a great occasion for a picnic or a for a day outdoors. Spring begins, and days are longer and longer: it’s funny to spend a few hours in the open air with family and friends, playing or chatting while sitting in the grass. Do not forget your snacks! At a certain time, everybody will be a bit hungry and would eat something!

#1 Muffins with Jam and Pecorino Cheese
Our first idea for a not conventional Easter Monday picnic is some muffins filled with pecorino cheese and plum preserve: a very good alternative for sandwiches. Preparing them is not that difficult, you just need to prepare them on Saturday before Easter, then on Easter Monday you just need to fill them.
Ingredients for muffins preparation
How to prepare our muffins? First of all, make sure you’ve got all the ingredients to prepare more or less ten soft muffins:
- 400 gr all-purpose flour
- 10 gr of brewer’s yeast
- 100 ml milk
- 80 ml extra virgin olive oil
- 100 ml of water
- A teaspoon of salt
- A pinch of sugar
Procedure to prepare muffins
In a bowl combine flour and brewer’s yeast with a little bit of water. Knead, and little by little add milk, water, salt, sugar and oil. Continue kneading until the dough will be smooth and will not stick to the bowl. Transfer the dough in a bigger bowl.
Now you need to proceed with a double rising: the first one, at room temperature, for about 3 hours, the second one in the fridge, for 10 hours. Once the dough has risen, you can form as many balls as the muffins you want to prepare. Use the rolling pin to flatten the balls and dispose them on a previously oiled baking tray, add a little bit of oil upon the muffins. Dimple the dough and garnish with salt before cooking: preheat your oven to 220°C and bake for 12-13 minutes. Let sit and keep in a cold and dry place.
On Easter Monday, you just need to cut them in half, stuff them with rocket salad or lettuce, pecorino slices and a bit of Lazzaris Organic Plum Extra Preserve.

What do you need to prepare 8 crêpes?
- 150 gr all-purpose flour
- 250 ml of milk
- 2 eggs
- A pinch of salt and a knob of butter
Batter preparation
Melt the butter in a pan. In a bowl combine eggs and salt. Once the butter has cooled down, you can add it to other ingredients in the bowl, finally you’ll add flour and milk.
Lightly grease a non-stick pan with butter and preheat the pan before cooking any crêpe. Pour a ladle of butter than swirl and tilt the pan to create a thin, even layer: every ladle will be a crêpe. Cook the crêpe until golden brown for about 2 minutes then flip it over and cook for another minute, et voilà: your crêpe is ready!
Now you just need to fill them with goat’s cheese, blueberry extra preserve and rocket salad.

Ingredients for panettone preparation
- 150 gr of all-purpose flour
- 100 ml milk
- 100 gr figs preserve
- 100 ml sunflower oil
- 3 eggs
- 1 packet of baking powder
- Salt
- Backing moulds (muffin moulds are perfect)
How to prepare panettone
To prepare panettone dough: mix the eggs in a large bowl until you reach a homogeneous mixture. Add flour, baking powder, milk and add oil little by little, continue stirring until the preparation becomes smooth. Now you can add salt and jam.
Fill the moulds with he preparation: paid attention not to fill them completely, because your preparation will rise while baking! Preheat your oven to 180°C and bake for about twenty minutes.
Let rest and here we are: your mini savoury panettone are ready to accompany cheeses and cold meats, just like bread, but better!
#5 Savoury Cakes with Gorgonzola Cheese and Cherry Cream
Last, but not least: small savoury cakes with cheese and Lazzaris organic cherry and ginger sauce! It may seem a risky pairing, but you really must try cheese with cherry sauce!

All you need to prepare ten small savoury cakes for your Easter Monday picnic is:
- 600 gr of shortcrust pastry (2 square rolls of ready to use shortcrust pastry will be perfect)
- 500 ml of béchamel
- 50 gr of sweet gorgonzola
- 3 eggs
- Baking moulds
- Organic cherry and ginger sauce
How to prepare you mini savoury cakes
Grease your moulds and cover them with shortcrust pastry, adapting it to the form of the moulds. Bake for about 10 minutes, meanwhile prepare the filling, heat the béchamel in a pan, add eggs and gorgonzola cheese. Once the preparation has cooled down, pour it into the moulds, adding a few teaspoons of cherry sauce. Bake again for 20 minutes at 180°C.
