- 200 g of all-purpose flour

- 90 g of sugar
- 2 medium yolks
- Lemon zest
- 1 pinch of salt

How to prepare tartlets with jam

- First of all, dedicate yourself to the shortcrust pastry. Mix flour and sugar, and create the classic “fountain” on a surface where you’ll add the egg yolks, the pinch of salt, the lemon zest and the cold butter cut into cubes.
- Mix everything well with your hands until you obtain a compact dough without lumps.
- Let it rest in the fridge for about 30 minutes before making the single portions.
- Roll out the pastry with a rolling pin until it is about 5mm thick.
- Cut small discs of dough and place them inside a muffin pan or special tartlet moulds. Be sure to gently press the dough into the bottom to give it the desired shape.
- Fill each portion with a teaspoon of jam and cook everything in a static oven at 180° for approximately 15 minutes.
- Once cooked, let your small desserts cool and prepare to taste them.
